Mezcal San Cosme represents contemporary Mexico. The artisanal production process remains exactly the same since 1895. San Cosme is the patron saint of doctors, responsible for miracles such as healing the sick. FROM OAXACA WITH LOVE.
The pinas (heart of the agave plant) are baked in ovens (large, 8-12 ft diameter / 6 ft deep, rock-lined conical pits in the ground), and then mashed by a large stone wheel (tahona) attached to a post that is pulled around by a mule. Once the juice is extracted from the mash it is placed in large wooden vats to be fermented for 48 hours. The distillation utilises a traditional cooper pot still, Mezcal San Cosme has double distillation, taking out the unwanted 'heads and tails'. Leaving only the most flavourful 'heart' of the distillate for our enjoyment.
