2nd Chance Wheat Whiskey presents the lighter side of the darker spirits. With hints of butterscotch, English toffee, and vanilla, this twice direct-fire pot distilled whiskey is aged in used rye barrels and is best enjoyed neat or on the rocks. Wheat is a typically forgotten grain but has become a pivotal player in this bright, smooth whiskey. The spirit starts with a foundation of unmalted wheat, is then rounded out with malted rye, and then is twice direct-fire distilled. At Sonoma they rely on the same methods used in the 16th century to help embrace the small inconsistencies that many other whiskies avoid. This promotes high flavour over high alcohol to showcase this subtle grain.
